About Us
Our Story
Geoffrey’s Cellars Meadery/Winery and Snyder’s Hives & Honey are both based in Rockledge, FL, manufactures, sells/locally only and distributes award-winning craft honey, wine and meads. Geoffrey’s Cellars Winery & Meadery is a Florida corporation and is owned by the vintner/mazer Jeffery Gilliard, who has been making wines since 1992. Our honey supplier is our own Geoffrey's Cellars Apiary and Snyder’s Honey & Hives. The Meadery/Winery serves as a production facility as well as a tasting room for customers to learn about, experience, and purchase a constantly evolving line-up of wines, traditional and flavored meads. With the honey from or apiary and Snyder’s Honey & Hives, the unique fermentation and conditioning process used by Geoffrey’s Cellars Meadery we produce uncommonly complex meads that are also refreshing and perfectly balanced for the Florida craft beverage audience.
Regular tours and tasting events with food trucks, and families will walk customers through the mead-making process and provide samples of a range of different meads. The tasting room will emphasize education as a critical part of the customer experience and help visitors appreciate an entirely new craft beverage, as well as provide an entertaining environment that will encourage repeat visits and grow a community of Geoffrey’s Cellars mead & wine fans. The unique Central Florida Snyder’s honey varietals are used for mead making, a part of the tasting experience and be available for purchase.
