Our Story
Meet Geoffrey Gilliard
Vintner | Mazer | Apiarist
Located in Rockledge, Florida, Geoffrey’s Cellars Meadery & Winery is the vision of Geoffrey Gilliard, a winemaker since 1992 and craftsman of award-winning wines and honey meads.
Geoffrey brings together three disciplines:
- Vintner — crafting wines from Florida-grown muscadine and scuppernong grapes in collaboration with Sticky Bee Vineyards (Titusville) and Claudio Vineyards (Port St. John).
- Mazer — producing traditional and flavored honey meads using a distinctive fermentation and conditioning process.
- Apiarist — maintaining local apiaries that provide the honey foundation for every mead.
Our licensed production facility and tasting room offer tours, educational experiences, and rotating tasting events that celebrate Florida agriculture and the craft beverage community.
At Geoffrey’s Cellars, every bottle begins in the vineyard and the hive — and ends in shared experience.

The story of Sticky Bee Apiary & Vineyard
Their honey isn’t just sweet, it tells the story of the local florals and hardworking bees that keep it all buzzing in Brevard. Their wine varietals are produced from their backyard vineyard.
What began as a backyard hobby in Titusville, FL, has turned into a deep respect for nature and the environment for Brian and Lynn, creators of Sticky Bee Honey and Vineyards.
They are partners in life with a small honey business and a big heart. Brian is the beekeeper, and Lynn supports product development, marketing, and such.
Both enjoy educating neighbors and the local community about honey, bees and pollinators.
Knowing that bees are more than just honey producers — they are vital to the ecosystem and human survival — they combine their skills to educate humans about the crisis of the decline of honeybees.
Featuring fresh, local honey at The Plant Shack on US 1 and the Space Coast Farmers Market on Saturdays increases visibility throughout Brevard County and helps promote awareness.
They are on a mission to sweeten lives and save the planet while protecting the bees and nourishing the community, building a sweeter future for all.

We also have our dear friends Claude & Donna from Port St. Johns' very own Claudio Vineyards, who have been producing some of the sweetest scuppernong and muscadine grapes in their region. The grapes that have been brought to us have made the award-winning wines, Claudes Conundrum and Persephone's Gift. Persephone, in Greek mythology, is the goddess of spring and queen of the Underworld. She is the daughter of Zeus and Demeter, the goddess of agriculture. Her story is famously known for her abduction by Hades, the god of the Underworld, and the subsequent explanation of the seasons. She truly watches out for both of our partners' vineyards, as the grapes that they have shared with us have made some of the best wine we have in our cellar.
