About Us
Our Story
Geoffrey’s Cellars Meadery & Winery is located in Rockledge, Florida. We manufacture, sell, and distribute award-winning craft honey, wine, and meads. Geoffrey’s Cellars Winery & Meadery is a Florida corporation owned by the vintner/mazer Geoffrey Gilliard, who has been making wines since 1992. Geoffrey's Cellars and Sticky Bee Vineyards work together to produce some of Florida's best honey and native grapes in our Rockledge & Titusville Apairiaries & vineyards. We also work with Claudio Vineyards in Port St. John, Florida, which produces delicious white scuppernong and muscadine grapes. The Liscensed Meadery/Winery serves as a production facility and a tasting room for customers to learn about, experience, and purchase a constantly evolving lineup of wines and traditional and flavored meads. With the honey from our apiary and Snyder’s Honey & Hives, the unique fermentation and conditioning process used by Geoffrey’s Cellars Meadery, we produce uncommonly complex meads that are also refreshing and perfectly balanced for the Florida craft beverage audience.
Regular scheduled tours and tasting events with food trucks and families walk customers through the mead-making process and provide samples of various meads. The tasting room emphasizes education as a critical part of the customer experience. This helps visitors appreciate an entirely new craft beverage and provides an entertaining environment that encourages repeat visits and fosters a community of Geoffrey’s Cellars mead and wine enthusiasts. The unique Central Florida Snyder’s honey varietals are used for mead-making, a part of the tasting experience, and are available for purchase.

The story of Sticky Bee Apiary & Vineyard
Their honey isn’t just sweet, it tells the story of the local florals and hardworking bees that keep it all buzzing in Brevard. Their wine varietals are produced from their backyard vineyard.
What began as a backyard hobby in Titusville, FL, has turned into a deep respect for nature and the environment for Brian and Lynn, creators of Sticky Bee Honey and Vineyards.
They are partners in life with a small honey business and a big heart. Brian is the beekeeper, and Lynn supports product development, marketing, and such.
Both enjoy educating neighbors and the local community about honey, bees and pollinators.
Knowing that bees are more than just honey producers — they are vital to the ecosystem and human survival — they combine their skills to educate humans about the crisis of the decline of honeybees.
Featuring fresh, local honey at The Plant Shack on US 1 and the Space Coast Farmers Market on Saturdays increases visibility throughout Brevard County and helps promote awareness.
They are on a mission to sweeten lives and save the planet while protecting the bees and nourishing the community, building a sweeter future for all.
Bryan & Lynn
We also have our dear friends Claude & Donna from Port St. Johns' very own Claudio Vineyards, who have been producing some of the sweetest scuppernong and muscadine grapes in their region. The grapes that have been brought to us have made the award-winning wines, Claudes Conundrum and Persephone's Gift. Persephone, in Greek mythology, is the goddess of spring and queen of the Underworld. She is the daughter of Zeus and Demeter, the goddess of agriculture. Her story is famously known for her abduction by Hades, the god of the Underworld, and the subsequent explanation of the seasons. She truly watches out for both of our partners' vineyards, as the grapes that they have shared with us have made some of the best wine we have in our cellar.
